Enology Wine Bar & Bistro was founded by Dr. Dimitrios "Jimmy" Kilimitzoglou, an entrepreneur and community leader with deep roots in Smithtown and a lifelong love of wine.
Jimmy spent years building relationships in the community as the owner of e.s.i. Healthy Dentistry. Alongside that work, another passion grew, shaped by travels through vineyards around the world and the stories behind every bottle. Enology is where that passion found a home: a space designed so that connection can unfold over a shared appreciation for fine wine and crafted cuisine.
The room itself tells the story. Stone, wood, and metal come together to balance global discovery with local connection. Rooted in a Greek heritage of hospitality, Enology is built on a simple belief: every bottle, every plate, and every guest carries a narrative worth sharing.
