An Evening at Enology: What a Wine-First Restaurant Means

Ask ten people what makes a great restaurant and you will hear ten different answers. Ask us, and the answer begins in the cellar.
Enology is a wine-first restaurant in Saint James, New York, and that ordering of words is deliberate. Most restaurants build a wine list to serve the menu. We built a kitchen to serve the wine. It is a small inversion with large consequences, and it shapes everything about an evening here, from the first pour to the last plate cleared.
The Evening Begins with a Question
Not “table for two?” We will ask that too, of course. The question that matters is the one our team asks once you are settled: what do you feel like drinking tonight?
From there, the evening finds its shape. Perhaps a glass of sparkling from the North Fork while you consider the cellar list. Perhaps a guided walk through our global selections, from Burgundy to the Willamette Valley, with detours through Long Island vineyards we are proud to pour beside them. Our team is trained to listen first and recommend second. That is the difference between a wine program and a wine experience.
Small Plates, Deliberate Pairings
The menu at Enology is built around small plates for a reason: they let a table explore. Rather than committing to one entrée and one glass, an evening here moves: a crudo beside a crisp white, whipped ricotta against something with a little more weight, a char-kissed flatbread that asks for a Long Island red. Plates arrive as they are ready, the table shares, and the wine keeps pace.
It is a different rhythm from the usual appetizer-entrée-dessert march, and it is the rhythm we think Saint James was missing.
A Room Designed for Lingering
Everything in the room, from the warm light to the seat you sink into to the space between tables, was chosen so that no one ever feels rushed toward the check. Some evenings bring live music. Tuesday through Thursday, the early hours bring Happy Hour pricing on select plates and pours, at the bar seats only. Other nights, our wine classes turn the room into something between a dinner party and a masterclass.
However the evening takes shape, the intention is the same: this is a restaurant for people who want the night to unfold, not conclude.
The Person Behind the Pour
None of this happened by accident. Enology is the creation of founder Jimmy Kilimitzoglou, who grew up in his family’s Greek-French restaurant in Brooklyn Heights, working as a dishwasher, then a line cook, then the one running the kitchen, before a lifetime of studying wine led him here. The room itself carries his story: stone, wood, and metal composed to feel like the inside of a wine barrel, assembled from years of photographs and notes collected across his travels.
His standard for the list is famously simple. “The wine has to audition for me,” Jimmy says. Every bottle is tasted and questioned before it earns a place: Is it balanced? Is it true to its grape and its region? Is the winery family-owned, farming organically or biodynamically? The result is a cellar spanning six continents and twenty-three countries, every bottle with a reason for being here.
And why Saint James? “St. James has a very strong sense of community. Very nice people who care about each other and the neighborhood,” he says. “They are into the finer things in life and can appreciate good food and good beverages. It is just a perfect fit.”

We are proud to call Saint James home, and prouder still that our neighbors from Smithtown, Stony Brook, Nissequogue, Head of the Harbor, and across the North Shore have made Enology part of their evenings. Long Island’s wine country holds an honored place on our list, alongside small plates built on ingredients from local, family-owned farms and local fish. So do the old-world cellars and new-world estates that give our guests somewhere new to travel, one glass at a time.
