On Friday, October 2, the kitchen team takes the night off. The doors stay open, the cellar is untouched, and the menu becomes something we have wanted to try for a while: a full evening of food that never meets a flame.
The Raw & The Refined is exactly what it sounds like. Cheese and the things that belong beside it. Salads with some ambition. Vegetables treated as the point rather than the side. A chilled soup. Dips, with chips made here rather than opened. Nothing reheated, nothing rushed, and nothing that needed a burner to be worth ordering.
It turns out this is the food wine likes best anyway. With no heat in the way, the list has more room to talk. The whites get sharper company, the lighter reds stop competing with char, and a half glass of something you have never heard of lands differently beside a plate that is all texture, salt and acid. Ask the team to steer you somewhere unfamiliar. This is the night for it.
