One seating, one menu, one long evening. On Sunday, September 20, Enology turns the whole room toward a single dinner: a chef-inspired, multi-course menu with a curated wine poured alongside every course, in a benefit for the Suffolk County Dental Society.
The evening is guided by Dr. Jonke and Dr. Kilimitzoglou, two accomplished sommeliers and wine connoisseurs. Nothing is poured without a reason. You will hear where each wine comes from, why it behaves the way it does beside a particular plate, and what to notice in the glass before you swallow. No lecture, no quiz, no wrong questions.
Chef Albert writes the courses to serve the wines, and the wines are chosen to serve the courses, which is a very different exercise from choosing a nice bottle after the fact. What you take home is not just a good dinner. It is a way of tasting that travels with you to every table after this one.
